Ingredients for 4 people:
1,100 g of milk
310 g of sugar
2 g of salt
500 g of dark chocolate 75%
110 g of Procrema (stabilizer for ice cream)

  1. Heat the milk, sugar, and salt to 80 °C.
  2. Add the mixture to the chocolate and emulsify it well with an immersion blender.
  3. Add the Procrema and leave the mixture in the refrigerator for 24 hours.
  4. Process the ice cream with an ice cream maker.

If you don’t have one, use intervals with a kitchen mixer and whisk: place the mixture in the freezer, with the bowl, for 10 minutes, and whisk it for 5 minutes outside the freezer. Repeat these intervals until the ice cream is well mixed.
